Sponge Cake
is a type of soft cake based on wheat flour, sugar, baking powder and eggs.[1][2] The only fat present is from the egg yolk, which is sometimes added separately from the white. It is often used as a base for other types of cakes and desserts.
A basic sponge cake is made by beating the eggs with sugar until they are light and creamy[1][3], then carefully sieving and folding in the flour (which may be mixed with a small amount of baking powder, though some chefs consider that the air incorporated into the egg mixture is sufficient for a good rise without the need for extra raising agent). Sometimes, the yolks are beaten with the sugar first while the whites are beaten separately, to be mixed in later.[2] The mixture is then poured into the chosen cake tin and baked. As can be seen, both methods take great care to incorporate air in the beating, whisking and sieving stages. This makes a very light product, but it is easy to lose the air by removing the cake before it has finished in the oven.

Sponge Cake
LEMON SPONGE CAKE
6 eggs
1 cup sugar
2 tablespoons freshly squeezed lemon juice
zest of 1 lemon
1 cup flour
1/4 teaspoon salt
1/2 cup chopped pecans
Preheat oven to 325°F.
Beat yolks of eggs until thick and lemon colored. Gradually beat in the sugar, grated lemon rind, and juice. Fold in half of the stiffly beaten egg whites.
Cut in sifted flour and salt, add nuts, and remaining egg whites.
Bake in a slow oven for about one hour or until toothpick inserted in center of cake comes out nearly clean.

SPONGE GINGER CAKE
1/2 cup buttermilk
1/2 cup molasses
1/4 cup butter
1 egg
1/2 tablespoon ginger
2 cups flour
3/4 teaspoon baking soda
Beat together the molasses, butter, egg, buttermilk and ginger. Stir in the flour and finally the baking soda, dissolved in a tablespoon of hot water.
Bake in greased and floured shallow square cake tins or muffin pans at 350°F until cake tests done (about 35 minutes).

AUNT MARTHA'S SPONGE CAKE
3 eggs
1 cup sugar
4 tbsp. warm water
1 cup flour
1 level teaspoon baking powder
1 teaspoon flavoring extract
In a medium sized bowl, add eggs and beat 1 minute at half speed. Add sugar and beat together 5 minutes more until thick and lemon colored. Add 4 Tablespoons warm water and mix again 1 minute. Sift together flour and baking powder and stir into wet ingredients. Do not overmix once the flour is added or cake will be tough. Add flavoring extract (vanilla, etc). Place in a shallow pan. Oven at 400 degrees for 5 minutes then at 375 degrees for 20 minutes.

This hot milk sponge cake loaf is quite easy to prepare. Use a hand-held mixer or the whisk attachment of a stand mixer to beat the eggs for the best volume.
INGREDIENTS:
* 1 cup cake flour, stir before measuring
* 1 teaspoon baking powder
* 3 large eggs
* 1 cup granulated sugar
* 2 teaspoons lemon juice
* 1 1/2 teaspoons vanilla extract
* 6 tablespoons milk, heated
PREPARATION:
Sift together the flour and baking powder; set aside.
Beat eggs until very thick and light, about 3 to 5 minutes. Gradually beat in sugar. Fold in sifted dry ingredients until blended. Combine milk and flavorings and heat until hot. Add the hot milk mixture to the batter and beat on low until smooth and well blended. Pour into a greased and lightly floured 9x5x3-inch loaf pan. Bake at 350° for 30 to 35 minutes, until a toothpick inserted in center comes out with no particles clinging.
